Have never used a IIgs emulator; so, it's hard to be sure. For one thing, you'd think any IIgs emu would be able to handle 3.5" disk images created by the current version of DSK2FILE (v5.5) which you can find on Ground at ftp://ground.ecn.uiowa.edu/apple2/Emulators/ . 3.5" dsks hold a lot more stuff than 5.25" dsks. If the files you put on the 3.5" disk images are shrinked, you can transfer about 1.5MB of files on each image. Also, there is no obvious advantage (except for a small saving in transfer time) in using ShrinkIt whole-disk files. You should be able to just transfer the disk image files you've created on the IIgs. Once the images are on the PC, the emu would be able to access them and move files to your virtual hard disk. A different approach would be to have the emu establish a NULL modem connection with the IIgs. _IF_ your emulator can get control of a COM port, you could (maybe) transfer files directly from the IIgs to the virtual IIgs hard disk on the PC.
